There have been slight variations with how this is prepared but some ingredients that are present throughout are noodles, broth along with beef, pork and a spoonful of bulalo (bone marrow). Among the many beautiful churches in Iloilo, one of the famous ones is the Miagai Church. Declared as part of the UNESCO World Heritage Site “Baroque Churches of the Philippines”, the church’s façade depicts symbolic carvings of banana trees, sharp wooden spears, and early Filipinos in their bahag(traditional loincloth). The church and its watchtowers were also built to defend the town and its people against raids by the Moros/Muslims. This explains the thick walls and also the defensive towers stretching along the Iloilocoast. Some also say that there are secret passageways It is because of this protective purpose that it is sometimes referred to as the Miag-ao Fortress Church.
